EZOfficeInventory holds a lot of structure: items with custom fields, locations, groups and members, and — on the tiers that have them — audits and purchase orders. Take a full export of the item list with serials, custom-field values and locations, plus your member list. Export check-out history and audit results separately if your tier exposes them; neither will replay into a new tool, so archive them.

Stackroom imports people and assets by CSV, people first. Categories, folders, departments, tags and hierarchical locations give EZOfficeInventory's groupings somewhere to land, and per-organisation custom fields take the rest. Resist copying every field across: a configuration that grew over years usually has a handful nobody reads.

What does not come across is logic — conditional fields, multi-stage approvals, automations. Stackroom has a single request-and-approve step with configurable roles. Write down what each rule achieves before switching; some will turn out to be workarounds for problems you no longer have.
